Job Description 
Samara Lombok is a lifestyle destination under the Destination by Hyatt umbrella, shaped by people, food, nature, and intentional hospitality. 
We are seeking an experienced Food & Beverage Manager to build, structure, and lead our F&B operations during an early operational phase. 
This is a hands-on build-phase role. The F&B Manager is expected to actively design, implement, and fine-tune service systems, workflows, and standards before scaling teams and performance. 
You will work with a young base team, while gradually integrating experienced talents and ensuring strong training and knowledge transfer to local teams. 

Key Responsibilities 
F&B Operations & Service Excellence 
Oversee daily operations across restaurants, bars, and service outlets. 
Ensure consistent international 5-star service standards aligned with Hyatt and lifestyle hospitality. 
Be present on the floor during key service periods. 

Build & Structure Operations 
Build F&B operations from zero. 
Establish and refine service flows, SOPs, station setups, and daily routines. 
Ensure operations become stable, repeatable, and scalable. 

Training, Leadership & Performance 
Train, coach, and mentor supervisors, service staff, and bar teams. 
Develop structured service and product training programs. 
Build a result-oriented culture focused on discipline, ownership, and consistency. 

People & Team Development 
Identify talent and support growth within the team. 
Create clear role expectations and performance standards. 
Lead by example with calm, structured, and fair leadership. 

Coordination & Control 
Work closely with Kitchen, Procurement, Finance, and Front Office. 
Support food cost control, beverage cost, stock discipline, and waste reduction. 
Ensure clean reporting, shift handovers, and daily controls. 

Requirements 
Mandatory 
Minimum 7–10 years of international 5-star F&B experience. 
Proven background in luxury hotels, lifestyle resorts, or international brands (Hyatt, W, Marriott, Accor, or equivalent). 
Strong hands-on experience building or restructuring F&B operations. 
Proven ability to train, lead, and develop teams. 
Strong floor leadership and service mindset. 
Fluent English, written and spoken. 

Preferred 
Experience in opening phases or start-up hospitality environments. 
Experience training and developing local teams. 
Strong understanding of service flow, staffing, and basic cost control. 
Calm, disciplined, and execution-driven leadership style.
