About Us
Kumbara Oasis is a boutique resort and lifestyle destination based in Kuta Lombok. Rooted in the values of elevated simplicity, nourishment, and cultural connection, we are launching a new restaurant concept inspired by Mediterranean and Arabian culinary traditions, designed to serve both in-house guests and discerning external diners by reservation.

Our restaurant is not just a dining venue — it is a core expression of the Kumbara brand. The food experience must reflect our commitment to authenticity, creativity, and excellence.

The Role
We are looking for a visionary and operationally capable Head Chef to lead the culinary build-out and launch of our restaurant. This role will involve concept development, kitchen setup, supplier sourcing, team training, and culinary execution during the soft opening and early operational phase.

The chef will also be responsible for staffing plans, procurement of kitchen and FOH equipment, and coordination with the accounting team and POS system providers to ensure full operational readiness.

The ideal candidate will play a foundational role in shaping our food identity and kitchen culture, with the possibility of transitioning into a long-term position based on performance and business direction.

Experience or willingness to support bar and coffee setup is highly desirable.

Key Responsibilities
Pre-Opening (Months -3 to 0):

Finalise and test the menu (inspired by Mediterranean & Arabian flavours)

Collaborate with design team on kitchen layout and equipment setup

Source and negotiate with local and regional suppliers

Hire and train core kitchen team

Develop SOPs, prep flows, hygiene and cost control systems

Create the restaurant staffing plan, contribute to FOH and BOH hiring, and collaborate on setting HR procedures and employment contracts.

Procure and manage delivery of all cooking, cleaning, and maintenance tools, as well as uniforms and front-of-house equipment including plates, glassware, tables, and service items.

Coordinate closely with the finance team to align budgeting and payment workflows, and oversee setup of POS machines and payment systems.

Assist with the setup of the bar and coffee station, contributing to layout, workflow, and equipment selection.

Opening Phase (Months 0 to +3):

Lead service during soft opening and early operations

Refine systems, food presentation, and consistency

Mentor team and identify long-term kitchen leadership

Collaborate with management and brand consultant on guest experience

We’re Looking For Someone Who…
Has restaurant opening experience, ideally in boutique hotels or high-end resort settings

Has experience in Mediterranean, Arabian, and fusion cuisine

Understands how to balance creativity with operational practicality

Is confident in leading a team, building systems, and delivering exceptional food

Has a collaborative spirit and thrives in multicultural environments

Can work autonomously in a remote location (on-site in Lombok)

While not mandatory, the ability to communicate in Bahasa Indonesia is an advantage for engaging with local teams and ensuring smooth operations.
