Assistant Group F&B Manager

Makai Beach Club plus a growing pipeline of restaurant projects from SAPO. Reporting directly to the Group F&B Director.
The role
Operational right hand of the Group F&B Director. Not a chef role, not a floor manager role. Cost, systems and standards across multiple venues.
What you will own
Cost control recipe cost cards, weekly food and beverage cost reporting, inventory cycles, variance and waste, supplier benchmarking
Systems POS and menu maintenance (Nomni), procurement rollout, SOPs in Bahasa Indonesia, HACCP and temperature logs
Operations daily standards walk-through, staffing and productivity, F&B execution of events, acting for the Director in her absence
New openings menu costing, pre-opening lists, supplier sourcing, staff training and handover
Requirements
4+ years in F&B management, 2+ in cost control, assistant F&B manager or operations
Advanced Excel used daily
Fluent Bahasa Indonesia and professional English
Experience with a modern POS and inventory system
Right to work in Indonesia, based in or relocating to Lombok
Preferred: high-volume beach club or multi-outlet experience · pre-opening · Indonesian food safety regulation · suppliers across Lombok, Bali and Java
