Job Summary
The Sous Chef will support the Head Chef in the pre-opening and daily kitchen operations at Gili Lontar. This role is responsible for setting up kitchen systems, ensuring smooth opening operations, maintaining food quality standards, and leading the kitchen team in a remote island environment.
Qualifications
Minimum 2–3 years experience as Sous Chef or strong Jr. Sous Chef ready to step up
Pre-opening experience is highly preferred
Experience working in remote areas / island operations is a strong advantage
Strong leadership and team management skills
Good understanding of food cost control and inventory planning
Knowledge of food safety standards (HACCP preferred)
Able to adapt to limited resources and dynamic operational challenges
Physically and mentally prepared for island-based assignment
